Single-varietal organic Grechetto from the vineyards along the Appian Way. Aged 12 months on fine lees and 6 in bottle: intense nose of apricot, dried fig, broom and chalky mineral notes. Fresh and structured on the palate, with elegant minerality and good persistence.
Organic Grechetto from the Tuscia region, no added sulphites, aged in Italian chestnut barrique. Unusual amber-copper colour. Nose: chestnut honey, vanilla, a light oxidative note. Palate: clear volcanic minerality, persistent finish.

Single-varietal Verdicchio from a biodynamic vineyard on Monte Follonica. Produced only in the best vintages: 20 months in steel, cement and large oak cask. Nose of yellow fruit, citrus, jasmine and almond. Fresh and sapid, with a long mineral trail. Tre Bicchieri Gambero Rosso.
Biodynamic Verdicchio from the Marche. Part of the must macerates on the skins, lending unusual character. Nose: peach, almond, citrus and briny notes. Fresh, enveloping, persistent mineral finish.

Single-varietal Montepulciano — a tribute to the dithyramb, the ancient Greek choral hymn to Dionysus. From the Colle Paolino vineyard on volcanic soils in Cori, aged 24 months in barrique. Complex nose: ripe red fruit, sweet spices, balsamic notes. Warm, powerful, persistent.
Single-varietal Nero Buono di Cori — a near-extinct indigenous Lazio grape, from the Lepini Mountains in the Tenuta di Ninfa estate. 24 months in barrique: black cherry, blackberry, plum with balsamic and spicy accents. Full-bodied, tannic, long persistence.
100% Violone — a local biotype of Montepulciano from the Tuscia, Cipolletta vineyard on clay soils. 24 months in barrique. Nose: blackcurrant, black cherry, tobacco and vanilla. Powerful, almost austere, polished tannins, long mineral persistence.

Organic Marzemino and Merlot blend from Capriano del Colle in Franciacorta. Named after the protected stag beetle that lives in the surrounding woods — a sign of biodiversity-conscious viticulture. Red fruit aromas, soft tannins, pleasant and persistent finish.
Single-varietal organic Bellone — an indigenous Lazio grape mentioned by Pliny the Younger. 24 months on the lees at the Tenuta San Pietro in Cori. Fine, elegant perlage, fruity aroma with yeasty notes, fresh and sapid palate.
The rosé version of Kjus, 100% Nero Buono di Cori with 36 months on the lees. Salmon-pink colour, citrus nose, fresh and incisive palate with subtle, elegant perlage.
Single-varietal Bombino Bianco from the Appian Way, whole-cluster pressed and bottle-refermented. 36 months on the lees. Golden straw yellow, fresh and mineral, with remarkably fine perlage and unexpected persistence for a Lazio white.

Light lager from Italian pils malts: notes of bread and honey, fresh and clean drinking. Farm-to-glass brewing at its most essential.
Pils malt, wheat and Italian-grown Cashmere hops: citrusy, balanced bitterness, slightly hazy. Started as an experiment, became a brewery staple. Pairs well with vegetarian cuisine.
Blanche with pink pepper, lime and salt, inspired by a trip to Madagascar. Fresh, hazy, feather-light — aromas of lime and yellow-fleshed fruit. Best served well chilled.
English-style red ale with high-temperature roasted barley: caramel, chestnut honey, dried fruit. Soft, rounded body from complex sugars developed during mashing.
The 100% Italian IPA, with Italian-grown Chinook hops. Deep golden, resinous aromas of exotic fruit and citrus. Bitter, persistent, assertive.
Three Italian cereals — barley, wheat and oats — Belgian-tradition open fermentation reinterpreted with zero-mile ingredients. Clove, ripe banana, spice, peach. Complex and enveloping.
