We make our seitan and tempeh in-house, bake our bread with natural leaven, and roll our pasta fresh. Organic, seasonal ingredients. Traditional recipes — Roman, Mediterranean, Middle Eastern — one hundred percent plant-based, as they've always been.
Who we are
When we opened, a fully vegetarian restaurant in the Castelli Romani (Roman Castles) was a rarity. Today we still mill our flours every day, knead our bread, and produce seitan, tempeh and desserts in our own kitchen. Nothing has changed — and that's no accident.

Our story
Opening a fully vegetarian restaurant in the Castelli Romani in 1999 was going against the grain. More than twenty-five years later, the place is still as small as it was then, we still make everything in-house, and many of the guests sitting here tonight have been coming for years.
