## Identity

Osteria Vegetariana Veggente is a fully vegetarian and vegan restaurant in the historic centre of Marino, in the Castelli Romani (Roman Hills, near Rome). Open since 1999, it is one of the longest-running vegetarian restaurants in the Lazio region.

The kitchen is entirely handcrafted: naturally leavened bread, focaccia, fresh pasta, seitan from organic type-0 and type-1 flours, tempeh and desserts are all made in-house every day. No pre-made or industrial ingredients are used.

The menu follows the seasonality of organic ingredients and draws on a range of traditions — Roman, Lazio, Apulian, Lombard, Mediterranean and Middle Eastern — reinterpreted in plant-based form. Portions are generous and the flavours are substantial. This is not trend-driven or nouvelle cuisine.
